Here it is almost the first day of summer and we are having our typical yo-yo type of weather.  A couple of days of summer like weather then it seems to shift back to fall or at least early spring type.  So, hang in there, eventually it will be summer.  I just don’t want to hear any complaining about it being too hot.

Ladies Lunch Bunch

We had a great turnout and good time at our “in house” Ladies lunch bunch.  Eleven of us enjoyed a variety of salads offered by our neighbors.  They were all very tasty and were a big hit.  Linda and Bev brought a couple of very nice desserts.  There were lots of laughs and good conversation.  How about we try to find someplace this summer when we have nice weather?  Maybe we could dine “al fresco”.  Then in October have another “in house” lunch.

We are happy that Preeti could join us, it was good to see her.

Recipe du Jour

Serves 6

Greek Orzo Salad (This is the recipe for the salad I brought to the Ladies Lunch Bunch)

One cup dry orzo (cook according to directions on package) drain and add to other ingredients
One half cup cooked shrimp (the small Oregon type shrimp work well)
2-3 oz. crumbled Feta Cheese
2-3 sliced green onions
3-4 springs of fresh dill
Optional-sliced black olives
Combine in bowl

The Dressing

1/3 Cup olive oil
Juice of 1 large lemon

Whisk together, pour over pasta and other ingredients stir to combine,

I like to make this the day before I want to serve so all the ingredients meld together

Traveling neighbors

  • Edy enjoyed old friends in Hawaii
  • Linda and Dawson visited family and friends in Florida
  • It was very nice to have CJ and Luis here at Richmond Manor for their visit.  Hopefully they will be able to spend more time here in the future.

We have eaten at Salt and Iron several times for lunch and enjoyed the experience.  Last week Jerry and I enjoyed burgers, they are almost as good as Hill’s, (Jerry thinks Hill’s are the best ever) a bit different, definitely a fork and knife burger, so much so that they bring you out a hot towel when you are finished.

They have a good sea food chowder.

They accept the Passport card, they take 20% off instead of a two-fer.

Of course, parking is always an issue downtown Edmonds but I do think it is worth it.

Have you folks noticed the orca/dolphins around the Richmond Beach area?? There are 3 batches of 3 on Richmond beach road. They are fun and colorful.  I don’t know who installed them or the purpose of them??

Tips du Jour

Painting corn
Keep several inexpensive pasty brushes on hand so that family and guests can painted melted butter on their hot ears of corn. This allows everyone to put as much as little as they please.

Since we are talking about corn on the cob my favorite way of cooking it in the summer is to simply to remove the husks, then put it in the micro wave for about 4 minutes (for two ears) more if your nuking more.  Grill them for about 5-6 minutes, the char really brings the sweetness out in the corn.  You can then butter and season to your liking.  Be careful they are hot, more so because they were cooked in the microwave.
