Well we are winding down to the end of the year, only 27 days until Christmas and a few more after that until the end of the year. We are obviously into winter mode, wind and rain seems to be now the norm. I hope you all had a great Thanksgiving weekend. Such a great time to spend with family and friends.
Book Club.
Betty reported that the book club was good. Attendees chatted about the Prayer Box by Lisa Wingate. We will take a break in Dec. because we all have such busy schedules. We will get together again on January 8th. We will be discussing A Gentleman in Moscow written by Amor Towels. We will be meeting here at my house, #303. Let me know if you plan to come.
Traveling Neighbors
I had a good time in NYC, my friend and I walked miles and miles. We tried to hit as many of the major sites as possible. We had great weather except for the one day which was in the high 20’s. A bit nippy but we managed.
Judy met her sisters for family time in Las Vegas.
Bev spent Thanksgiving in Victoria, her photos on Facebook of the city were beautiful. .

Recipe du Jour
Speedy Chicken Parmesan Soup
Ingredients
1 ½ T olive oil
1 small onion diced
3 cloves minced garlic
1 Tsp. dried thyme
½ tsp ground fennel
½ tsp black pepper
¼ tsp salt
3 Tbsp. tomato paste
1 can (14 oz.) diced tomatoes with herbs
5 cups chicken broth
2 cups shredded, cooked chicken (left over from a rotisserie chicken)
1 ½ cup dry penne pasta
2 Tbsp. chopped basil
Shaved parmesan cheese
Directions
In a large stockpot, heat olive oil over medium heat. Stir in onion and garlic and cook for 2 minutes. Add thyme, fennel, pepper and salt. Stir to combine and cook for 3 more minutes, until onion is softened. Add tomato paste and stir to coat the onion. Add tomatoes, broth and chicken, then bring to a boil. While boiling, add pasta and cook until noodles are just tender, about 10-11 minutes. Stir in basil and serve topping with Parmesan cheese

Another hearty winter favorite
Hungarian Goulash
1 # beef stew meat, cut into 1-inch cubes
1 # boneless pork, cut into 1-inch cube
2 large onions, thinly slice
2 Tbsp. paprika
2 Tbsp. canola oil
1 cup water
1 cup beef broth
½ tsp salt
½ tsp dried marjoram
1 Tsp all-purpose flour
1 C ( 8 oz.) sour cream
Hot cooked noodles
Directions
- In a large skillet, brown beef, pork and onions in oil over medium heat.
- Drain. Add the water, broth, paprika, salt and marjoram; bring to a boil.
- Reduce heat; cover and simmer for 1 ½ hours or until meat is tender.
- Just before serving, combine flour and sour cream until smooth; stir into meat mixture.
- Bring to a boil over medium; cook and stir for 1-2 minutes or until thickened and bubbly. Serve over noodles.
Serves 6-8

The Christmas tree lighting ceremony will be in the Fountain Plaza by Richmond Beach Coffee Company. Sat. Dec. 2nd at 4:45-5:30 Parking in the back lot of Spin Alley. Refreshments, music and the arrival of Santa on his red Fire Truck. (Wow, that is today.)

Food Drive
Pretti informed me that Syre is having a food drive for the underprivileged children and families in the Shoreline area. If you would like to contribute, please bring any nonperishable items you may want to give to either the Christmas party on Sunday or leave them on our door step and Preeti will pick them up from us before Dec. 8th.
