I hope everyone is enjoying all the blooming trees and other colorful shrubs and bulbs.  It will be time for the tulips in Skagit Valley to show all their glory soon.

A good day trip to enjoy all the splendid color.

Book Club

Book club convened at Myrna’s home.  There were seven of us.  Myrna had some tasty goodies for us to enjoy.  Linda led the discussion with some questions for all of us to think about.  April book club will be at Edy’s , #311, we will be reviewing The Cartographer of No Man’s Land by P.S. Duffy.  The book is based during WWI.  A tough subject but it was challenging, and I enjoyed it.  Be sure to let Edy know if you’re going to attend so she can plan according.

Traveling Neighbors

Jeanne had a good trip to Morocco, it sounds like it was a very interesting trip.  Someplace I have never thought about visiting.  Sometimes it is a good thing to visit and explore places that are off the beaten path. She said the desert and mountains were beautiful.

David and Edy had a good time in Tucson.

Linda and John are off to Cabo San Lucas with family

 

Here are a couple of cold weather recipes for the days the weather man reports upcoming nasty days

Recipe Du Jour – Serves 4

Red wine-braised lamb shanks

Ingredients

2 Tbsp olive oil
4 lamb shanks
1 large chopped onion
4 large garlic cloves minced
1 28 oz. can ready cut tomatoes
1 ½ c red or white wine
1 tsp dried oregano
1 tsp. dried thyme
1 tsp rosemary

Instructions

In a Dutch Oven:

Brown shanks in olive oil, about 12 minutes.  Transfer to a plate and reduce to low, add onion, garlic and sauté about 6 minutes.  Return lamb to Dutch oven.  Pour in tomatoes plus juice, wine.  Stir in herbs, salt and pepper.  Cover and simmer about 2 hours or until lamb is tender when pierced with a fork.

Remove shanks and cover to keep warm, uncover and boil to reduce sauce.  Pour sauce over shanks.  Serve with potatoes or pasta

 

Soup Du Jour

Mediterranean Soup

Serves 4

Ingredients: 

Sauté

1/2 Lb. mild sweet Italian Sausage
1 diced onion
2 cloves minced fresh garlic
1 ½ tsp thyme
¼ tsp. pepper

Stir in

3 cups low-sodium chicken broth
½ C small white beans which have been soaked overnight
1 tsp grated lemon peel

Simmer for 2 hours

During the last 15 minutes add:

2 diced carrots
2 chopped celery stocks
1 c dry small pasta shells

Top with

Swiss cheese
Chopped tomatoes

Neighborhood News

There is a new fish market going in the neighborhood.  It is named Kuzma’s Fish Market.  It is located one block off Hwy. 99 & 212th on 70th Ave. W. next to the Banner Bank.  They will be opening this spring.  #425-582-8521.  There is another fish market going in downtown Edmonds, but I don’t have the details on it yet.  Will advise when I get more information.

 

 

April Birthdays

Bob Terry and Laurie Otnes both have birthdays in April.
I missed Dixie’s birthday in March.
