Book Club

Book club was at Edy’s home.  We reviewed Cartographer Of No Man’s Land, written by P.S. Duffy. Edy knows the author so she gave us some background information which was interesting.  Edy’s served a real treat for our enjoyment, brownie hot fudge Sundays.  They were enjoyed by all.  May Book Club will be held at Shirleen’s, #211.  We will be reviewing Beneath the Scarlett Sky, written by Mark Sullivan.  I enjoyed the book and hopefully everyone else will too.

Traveling Neighbors

It looks like all our “snow birds” have come home for the summer.

  • Ed and Helen Shirk had a good time in the SW while there enjoyed a trip to Mexico for a wedding.
  • I haven’t talked to Don and Donna yet but do know they are home.
  • The Harvey’s also back from their trip to Palm Springs.
  • Linda and John didn’t go to Cabo yet, they had a shorter trip closer to home.  While there Linda had a trip to the ER with a health issue.  We are so happy everything has turned out ok.
  • We will be taking a little road trip to Idaho for one of our grandson’s graduation then onto Montana to visit a niece.
  • David went to Louisiana to visit family.  And Edy of course is of on one of her working trips.

Puneet, Pretti and kids had a great time in Egypt, she said it was fantastic, they got to go to the inside of one of the pyramids.  Of course, they all got a stomach bug but all survived.  Her mother just came in from India so will be here to visit for a while.

New Neighbors

Andrea and Drake Loeser, #308 have finally moved in full time.  A big welcome to our Richmond manor community.

Recipe Du Jour  (Serves 8)

Banana Chocolate Chip Snack Cake

Ingredients:

2 Cups (10 oz) all-purpose flour
¾ tsp salt
½ tsp baking soda
8 tbsp unsalted butter softened
1 ½ cups (10 ½ oz.) sugar
1 cup mashed ripe bananas (2-3 bananas)
2 large eggs
1 tsp. vanilla extract
½ cup whole milk
1 C (6 0z) semisweet chocolate chips

Instructions

 Adjust oven rack to middle position and heat oven to 350 degrees.  Grease and flour a 8 inch square baking pan.  Whisk flour, salt and baking soda together in a bowl.

  1. Using a stand mixer fitted with a paddle, beat butter and sugar on medium-high speed until pale and fluffy, about 3 minutes. Add eggs, one at a time, and beat until combined.  Add bananas and vanilla and beat until incorporated.
  2. Reduce speed to low and add flour mixture in 3 additions, alternating with milk in 2 additions, scraping down bowl as needed. Using a rubber spatula, stir in ½ cup chocolate chips.  Transfer batter to prepared pan and smooth top with the rubber spatula.  Sprinkle remaining ½ cup chocolate chips evenly over the top.  Bake until toothpick inserted in center comes out clean, 45-50 minutes.  Rotate pan halfway through baking.
  3. Let cake cool completely in pan on a wire rack.

Cream cheese Frosting

4 Tbsp unsalted butter softened
1 cup (4 oz) confectioners’ sugar
4 oz cream cheese cut into 4 pieces and softened
¾ tsp vanilla extract

Using a stand mixer fitted with a paddle, beat butter and sugar on medium speed until light and fluffy, about 2 minutes.  Add cream cheese, 1 piece at a time, beating after each addition until fully incorporated.  Add vanilla and mix until no lumps remain. Spread on cooled snack cake.

Tip du Jour

When making grilled cheese sandwiches, or even grilled tuna.  Instead of using butter on the outside of the bread try mayonnaise.  Just smear a thin coat on the bread and grill as normal.  The mayo makes a nice crunchy crust.

Tulips

Since we are in the middle of tulip season I will pass this tip I heard yesterday:
Add 3 pennies to the water and 3 ice cubes every day. I haven’t tried this myself but my friend who told me about it swears it works to keep them longer.  A person at the tulip gardens in Skagit told her.

Neighborhood News

We have had some information that the building the Wild Horse was located was sold and a possibility a new restaurant will be coming.  I’m hoping for a nice French Bistro.  We will let you know if we hear any new information.

Edmonds farmers market, called the Garden Market opens on Sat. May 5th.

Restaurant review

Wake N Bacon
1437 NW Richmond Beach Road

Jerry and I haven’t eaten at Wake N Bacon yet but have heard from neighbors who have had.  We have had mixed reviews.  So, let us know what you think when you try it out.

The place opened in Feb. the owners are from Texas.

Road construction

 It looks like we will all have to practice a bit of patience with the road revival out on 195th.  I’m sure it will be a challenge at times.
