Thank goodness we finally have our blue skies back.  The smoke was awful.  We were looking forward to a good rainstorm.  Hopefully the fires are being contained and under control.

Sumner Event

 

Another great RMC event was held on Sunday evening.  29 neighbors and friends joined for a fun evening of chatting, laughing and enjoying each other’s company. We had an abundance of wonderful food and drink supplied by all who attended.  It was great to have Preeti, Puneet, Mahima and Anche join us along with Francis Lembo’s grandson, Lorenzo.  Thank you, gentleman, for setting up the chairs and tables and for everyone to help break down and put everything away at the end of the evening.   We missed all who couldn’t attend.

Put Dec. 2nd on your calendars for the Annual Christmas party.

Traveling neighbors

John and Linda returned from their annual summer trip to visit family and friends in Indiana and Ohio. Even though they were gone for the Pot luck John insisted take a platter of his wonderful home-grown tomatoes for everyone to enjoy.

Jerry and I will be going to the large metropolis of Riggins Idaho for our youngest grandson’s wedding.

 

 

 

 

Book club will be held on Monday, Sept. 10th at Linda W. home, #301.  Come with your list of books so we can get the reading season scheduled.  Unfortunately, I will miss the 1st session.  Let Linda know if you plan to go or not

Recipes Du Jour

Bruschetta

 This is a great late summer appetizer, using all the wonderful tomatoes available.

 3 large ripe tomatoes-seed and chop
½ large red onion diced
1 C fresh basil leaves
¼ C olive oil
1 T. red-wine vinegar
2-3 peeled garlic cloves- to rub on the toasted bread
Course salt and fresh ground pepper

  1. In a large bowl combine tomatoes, onions and basil.  Season with salt and pepper.  Add olive oil and vinegar Mix well.  Let stand at room temp for at least one hour before using.
  2. Cut French bread diagonally into ½ slices. Brush one side with olive oil and toast.
  3. Run hot bread with garlic cloves, one side only. Sprinkle with salt and pepper and then top with tomato mixture.  Let stand for a few minutes.

If anyone wants to try this and needs some basil I have a large plant on my deck and would be happy to share.

Another Tomato recipe ­­ this time a desert

Green Tomato Cake

Preheat oven 350

Use 9 X 13-inch pan sprayed with cooking spray

3 eggs
1 C vegetable oil
1 ½ tsp vanilla
2 C diced green tomatoes-seeded and diced
1 C. chopped walnuts

Mix all the above together in a bowl

2 ½ C Flour
1 tsp baking soda
½ tsp salt
3 tsp cinnamon
1/2 tsp baking powder

Whisk dry ingredients together and add to egg/tomato mixture.  Mix until well combined.  You might need to add a small amount of additional flour if your tomatoes are juicy.

Bake 45-60 minutes

Re-crisping of stale Crackers and cookies

The staling of dry, crisp foods such as crackers, tortilla chips, and crunchy cookies occurs because moisture from the atmosphere gets absorbed by the item’s starches, which soften and rob it of its crisp texture.

Luckily, this process is reversible. And if you keep the re-crisped items dry by storing them in an airtight container or zipper-lock bag, they will stay crisp.

METHOD: Spread foods such as soda crackers and tortilla chips in an even layer on a rimmed baking sheet (avoiding overlap) and place larger items such as cookies and graham crackers on a wire rack set in a baking sheet. Place the sheet on the middle rack of a 225-degree oven for 15 to 25 minutes (the timing will vary, depending on the item), until the food is crisp again, stirring (or flipping, in the case of cookies) halfway through baking.

Refuse Room

A thank you for whom ever was a “smart cookie” and put the knife in the refuse room for all to use to help break down cardboard boxes. Invariably I manage to forget to take my box cutter with me when I take down boxes that need to be broken down, so this really comes in handy.    If you haven’t noticed it is located above the light switch, as you come into the room.
