Summer Fruit Chicken Salad
Serves 4
2 cups torn romaine lettuce leaves
2 cups cooked and shredded boneless, skinless chicken breasts
1 peach sliced
2 plums, sliced
¼ C thinly sliced red onion
1/3 Cup (or to taste) honey-mustard salad dressing.
Combine all ingredients except dressing in a large bowl. Drizzle dressing around edge of bowl and gently toss together.
This is a great way of using that left-over rotisserie chicken
Recipe from Central Market
Chicken in Tarragon Sauce
Serves 4
4 boneless skinless chicken breasts
1 T unsalted butter
1 T olive oil
Salt & pepper
3 T chopped shallot
1 T chopped fresh tarragon
½ heavy cream
Flatten chicken breasts to ½ inch. In a large sauté pan melt butter and olive oil. Season with salt and pepper, when the butter is hot add chicken, sauté turning once until chicken is golden brown & juices run clear about 3 minutes per side. Transfer to a warm plate. Add shallot and sauté stirring until translucent 1-2 minutes. Add tarragon & cream, decrease heat to medium, cooking and stir until bubbly and thickened. Return to pan and coat, serve

Reviving left over pizza
Instead of putting the pizza in the microwave, put the pizza in a cold non-stick frying pan., cover and turn the burner to low. About 8 minutes in the pan gives the cheese time to melt while the crust stays crispy, no more soggy slices.
Carrying for fresh berries
To extend the life of fresh berries/ blueberries or strawberries, wash them in a mild solution of distilled white vinegar. 1-part vinegar to 3 parts water. Dry them and store them in a paper towel lined airtight container. The vinegar kills the bacteria without imparting flavor, and the berries stay fresher for longer.

The Annual Potluck is coming up on August 25th. Set up time usually starts around 4:00. Dinner is at 6:00.
I’m sure you have all read Laurie’s emails regarding the menu change for the potluck. I think it is a great idea and she has had a great response. We will be getting out the sign-up sheets this weekend. All you cooks put your thinking caps to come up with great salads, appetizer’s and most importantly desserts to complement our chicken. Let’s make this the “Best Ever” potluck ever.
Be sure to note on the signup sheet if you plan to attend?? And whether you liked a baked or fried version of chicken.

Restaurant review
Central Market Deli
The deli in Central Market is filled with great take out items. They also have tables you can eat at both inside and out. We discovered they have as their special on Saturday is a prime rib sandwich and or dinner. The sandwich is cut off a prime rib roast right in front of you, this includes a side. One sandwich was enough for both of us. We also purchased a hunk of prime rib to bring home. This runs $16 per pound and was fantastic, perfectly medium rare. A nice treat when you don’t want to go through the time and expense of cooking a whole prime rib, especially in the heat of the summer.
Neighbors under the weather
Andrea recently had one of her knee’s replaced. She seems to be on the road to recovery. We wish her a speedy recovery.
Notary
There has been some question about notary’s in area? It might be nice if we had a “in house” notary for RMC residents to use. We were wondering if anyone in the building would be interesting in becoming one?
