Wow, what fantastic weather.  No wonder it is my favorite time of year.

Halloween was quiet around here.  I understand Bob and Judy’s little ones were delightful, unfortunately Jerry and I missed them this year. Edy had friends here from London, they brought costumes over with them and joined the fun.   Mahima and Anch came over for their annual Halloween visit.  It is always fun to see what they come up with.

Traveling Neighbors

This has been a busy time for RMC neighbors to be traveling about.

  • Bev has been over on the Olympic peninsula exploring.
  • Carole R. went to Calif. to visit family.  She managed to experience some getting around problems because of the fires down there.
  • Drake and Andre were also in Calif.  They experienced some hot weather.
  • Edy had a good trip to Europe for work.
  • Cheri visited friends in the Tahoe area.
  • Jerry and I spent some time in the SW, a good road trip, saw lots of sage brush and cactus.  Zion and Bryce Canyons were our favorites in addition to visiting friends and family.

 

Book club was at Edy’s, The Lacuna was discussed.  I missed it but I’m sure it was a fun evening.  We will be meeting at my house, #303 on Nov. 11th.  We will be chatting about Educated by Tara Westover.  Hopefully everyone will have found the books as interesting as I did.  Let me know if you plan to come

 

 

 

Tips Du Jour

Instant Soup

Since this is “soup season” this is a great way of keeping some handy for a quick lunch.  Freeze in single serving is a great way to make this happen.

  1. Set out several 10 or 12 once paper cups for hot beverages and fill with a portion of cooled soup (make sure it isn’t filled all the way to the top).  Label, wrap and freeze each cup.
  2. Whenever you want a quick cup of soup, remove as many servings as necessary from the freezer and microwave them until they’re hot and ready to serve.

Keeping Avocados Green

Avocado flesh turns brown very quickly once it is exposed to air.  Try this solution for preserving the color of extra avocado halves.

  1. Rub 1 tablespoon of olive oil over the exposed avocado flesh.
  2. Allow the excess oil to drip into a shallow bowl, then place the avocado half cut side down in the center of the oil puddle, creating a “seal”. Store the avocado in the refrigerator.

Hungarian Goulash

1-pound beef stew meat, cut into 1-inch cubes (I use Chuck roast)
1-pound lean boneless pork cut into 1-inch cubes.
2 large onions, thinly sliced
2 Tbsp canola oil
1 Cup water
1 Cup beef stock
2 T paprika
½ tsp salt
½ tsp dried marjoram
1 Tbsp all-purpose flour
1 C (8 ounces) sou8r cream
Hot cooked noodles

Directions

  1. In a large skillet, brown beef, pork and onions in oil over medium heat; drain.  Add the water, broth, paprika, salt and marjoram; bring to a boil.  Reduce heat; cover and simmer for 1 ½ hours or until meat is tender.
  2. Just before serving, combine flour and sour cream until smooth; stir into meat mixture. Bring to a boil over medium heat; cook and stir for 1-2 minutes or until thickened and b bubbly.  Serve over noodles

Upcoming Holiday Event

Our Annual Holiday Party is less than a month away.  It is happening on Dec. 1st in the upstairs meeting room.  Bring your favorite appetizer for all to share.  We will have a sign-up sheet out soon for everyone to indicate what you will bring.
