Summer has made it to the NW with vengeance. I hope everyone is enjoying the warm weather and not complaining because it is “too HOT.” I know it is a challenge staying cool, everyone has their own idea of how to keep their places cool. I guess if it gets too bad, we can always take our chairs down to the garage and have a chat.

Recipe from Southern Living
Pork Chops with Dijon Buttermilk sauce – 4 SERVINGS
Ingredients
4 (9-oz 1-inch thick) bone-in (or boneless) center-cut pork chops
1 ¼ tsp kosher salt
½ tsp fresh ground black pepper
1 T unsalted butter
1 medium shallot, finely chopped (about 3 T)
3 medium garlic cloves, finely chopped (1 T)
1/1/2 tsp all-purpose flour
1 tsp finely chopped fresh rosemary, plus more for garnish
1 C unsalted chicken stock
2 tsp course-grained Dijon mustard
½ C whole butter milk
Directions
- Preheat oven to 400F. Heat oil in a large cast-iron or heavy bottomed skillet over medium-high. Pat pork chops dry. Sprinkle both sides evenly with salt and & pepper. Add pork to skillet. Cook, undisturbed, until bottoms are golden brown, 5-6 minutes (pork will not be cooked through). Transfer pork to a plate; set aside.
- Reduce heat under skillet to medium. Add butter to skillet; scrape up brown bits stuck to bottom of skillet using a wooden spoon. Add shallot, garlic, flour, and rosemary. Cook, stirring constantly, until fragrant, about 30 seconds. Stir in stock and mustard. Bring to a simmer over medium heat. Simmer, undisturbed, until slightly reduced, about 3 minutes.
- Return pork, browned side up, and any juices to mixture in skillet. Transfer skillet to the preheated oven; roasted until a thermometer inserted into thickest portion of chops registers 145F 6-8 minutes. Remove skillet from oven. Transfer pork to serving plates.
- Return skillet to stovetop; bring mixture to a simmer over medium heat. Simmer, undisturbed, 2 minutes. Whisk in buttermilk; return to a simmer over medium heat. Simmer, whisking often, until buttermilk sauce is slightly thickened, 1-2 minutes serve.
- This recipe can easily cut in half

We are lucky enough to have a great fresh fish market in Edmonds. The name of it is Kuzamas.

Kuzamas has a wide selection of fresh fish, shellfish, and poke. I have also heard they have a great clam chowder.

Chuck and Venita Hyden (307) have recommended two Mexican restaurants, Las Brasas del Volcan is reminiscent of the Colima region of Mexico. The other is Casa Oaxaca again reminiscent of the Oaxacan region of Mexico.

National Nordic Museum

A little further afield is a great venue that some might find interesting.
Drake and Andie recently visited the National Nordic Museum and were lucky enough to visit during a great exhibit From Dawn to Dusk: Nordic Art from Sweden’s National Museum. Although the rest of us missed the afore mentioned exhibit there are some upcoming Exhibitions that look great.

RMC Annual Summer Potluck
SAVE THE DATE: August 28, 2022
In the past we have had our summer potluck on the last Sunday of August, this year that date is August 28th. There is a consensus that we should resume the event. We will soon have a sign-up sheet on the windows of the third-floor common room and the Book Nook on the second floor.
We all gather in the garage and have a wonderful time. We move tables and chairs from the third-floor common room to the garage, usually starting about 4:00. Dinner starts about 6:00 PM.
It is a BYOB event. I hope everyone puts this date on their calendars and comes. In the past it has been a fun time of chatting and getting to know your neighbors better.
