Richmond Manor News | January 2024

Almost all the sparkle and Christmas cheer is gone from our halls, Christmas tree is down.  Back to our normal day-to-day chores and living.  On one hand I’m happy to be back to “normal” on the other hand I will miss all the great Christmas light displays and social events that happen during the holiday season.  I hope everyone had a great time and wish everyone a happy and healthy 2024.

Book club will be at my house (303) on January 8th. We will be chatting about The Blooding by Joseph Wambaugh; it is a true story about the first case which was solved using DNA. Let me know if you plan to join the group.   I’m looking forward to getting back to a “normal” schedule of book club.  See you then.

 

 

 

 

Traveling neighbors

Carole had a good time with family in LA, she had to come home to rest from hanging out with her grandchildren.

Linda and John had their family here from NY, they had a full house.  John noted how quiet it was after they left.

Luis and CJ will be leaving us soon to go back to Madrid, we will miss them here in Richmond Manor, we will be looking forward to their next visit.

 

Milestone

Linda and Dawson celebrated their 49th wedding anniversary last week, we wish them many more.

Recipe du Jour

Banana Crunch Muffins

Ingredients

3 cups flour
2 cups sugar
2 tsp baking powder
1 tsp baking soda
½ tsp table salt
½ # unsalted butter, melted and cooled
2 extra large eggs
¾ C whole mile, I use 2 % and it works ok
2 tsp vanilla
1 cup mashed ripe bananas (2) bananas (I put my way overripe bananas in the freezer so I have them available to make muffins or banana bread
1 cup ripe banana diced
1 cup granola
1 cup chopped walnuts.
1 cup sweetened coconut.

  1. Put flour, sugar, baking powder and baking soda and salt in a large bowl and whisk to blend.
  2. Add melted butter and blend.
  3. Combine eggs, milk, vanilla, and mashed bananas and add to flour and butter mixture (don’t over mix)
  4. Fold diced bananas, walnuts, granola, and coconut.

Fill muffin tins and bake for 25-30 minutes, turning muffin pan halfway through.

Makes 18-24 muffins.

Baked Chicken and Mushrooms

 Ingredients

1 ½ # boneless skinless chicken breasts
½ tsp sea salt
¼ ground black pepper
¼ c flour + 1 tsp flour for the sauce
2 T butter divided.
4 fresh garlic cloves, minced.
1 ½ cups low-sodium chicken broth or stock
1/3 C freshly shredded mozzarella cheese
1 # mixed mushrooms, sliced if needed, (use any of your favorites) I use mostly just cremini mushrooms

 

  1. Preheat oven to 375 F
  2. Spray or brush a 9 X 13 baking dish with oil.
  3. Cut the chicken breasts horizontally to make a thin cutlet, pound the cutlet so they are the same thickness.
  4. Season chicken with sea salt and pepper on both sides
  5. Lightly coat the cutlets on both sides with flour
  6. Melt 1 tbsp butter in a large skillet over medium heat. Add the chicken in 2 separate batches and cook for 2 minutes until golden brown then flip and cook for 2 minutes more on the other side.  Add the remaining 1 Tbsps. butter for your second batch.
  7. Transfer your check to the prepared baking dish.
  8. In the same preheated skillet add in your mushrooms and sauté for 3-4 minutes
  9. Add in the minced garlic and cook for 1 more minute.
  10. In a small bowl whisk the chicken stock/broth together with 1 Tbsp of flour until there are no lumps.
  11. Pour the flour/stock mixture into your skillet and bring to a simmer, stirring to remove any brown bits from the bottom of the pan.
  12. Pour this mushroom sauce over the chicken in the baking dish then sprinkle with cheese.
  13. Bake for 15-17 minutes or just until chicken is cooked through and the cheese is melted.

Serves 4

Shoreline news

The city is proposing the removal of the defunct bank just south of Richmond Beach Road, on the 8th. In its place a developer would like to construct a 230 unit assisted living facility with 130 parking places. The size is wildly out of proportion to everything else in our neighborhood. The rendering of the proposed building, which has not been approved, but will be unless we oppose it, would also eliminate the Santa Fe Restaurant, the nail salon, Richmond Beach Greetings (our post office), and the dry cleaner’s..  Please send your comments on this to Alicia Halberg at 206-801-2552or at ahalberg@shorelinewa.gov today!

We have eaten here in the past, but since it is a bit our of the way we seem to forget it is one of our fave’s.  We went with our daughter and son in law on a Sat. evening.  Thank goodness we wanted an early dinner; we were lucky to snag a table just before the hoards hit the door.  I always feel like I’m eating in a funky Italian place in NYC when we go there.

The food was good, prepare to be hungry or plan on taking part of your meal home, portions are massive.  Service was good, and we were lucky enough to get a booth so it was a bit quieter than if we would have had to sit in the middle of the room.  We have never eaten there for lunch but understand the grinders and sandwiches are very good.

 

RMC Christmas

The Annual Christmas party was a great event, a good turnout.  Lots of great food and drink. It is such a great event to hang out with neighbors and start off the holiday season on a happy note.  So, mark your calendars for the next one, it will be held on December 1, 2024.  Save the date and start thinking about what you will contribute to the buffet.  Same place and same time. Thanks everyone for all the wonderful contributions and help setting up and cleaning up after.
