Richmond Manor News | July 2025

Jerry and I often ruminate how lucky and blessed we are to live in the community of Richmond Manor.  One example of what makes RM so great was the event we joined last night.

Last night we had a party here at RM, it was a great success. The party took place in Book Nook on the 2nd floor, with great turnout, wonderful food.  We normally would have held our summer potluck in the garage in August.  It was much easier to set up and take down having it upstairs.  Thank you to all who joined the party and helped set up and take down.

Book club is still on vacation; we will meet again in September.  Start to make a list of your favorite summer reads to submit so we can have a great book club season.

Documentaries

Osama

We just finished watching a Documentary about Osama Bin Laden which was very informative and interesting.  We found it on Netflix and had 3 episodes.

Pangolin

Recently we also watched a Documentary about the infamous critter which was blamed for causing Covid in the early days.  Pangolin Kulu’s Journey, found on Netflix.

Pangolin: Kulu’s Journey, from Oscar-winning filmmaker Pippa Ehrlich, delves into the secret lives of pangolins. Pangolins are the world’s only scaly mammals and one of the most trafficked species across the world. The 90-minute film tells the story of Kulu, a three-month-old ground pangolin rescued from the illegal wildlife trade, and his slow return to the wild in South Africa. “Kulu’s got an incredible personality, he’s very much his own pangolin.

Recipe Du Jour

I try to always keep raw shrimp in our freezer.  If I’m at a loss as to what to have for dinner I can always pull shrimp out and thaw them and use them into various recipes for a quick dinner.  This is one of my favorites

Shrimp Scampi

Serves 4

  • 3 tablespoons salt
  • 2 tablespoons sugar
  • 1 ½ pounds shell-on jumbo shrimp (16-20 per pound), and tails removed, shells reserved
  • 2 tablespoons, extra-virgin olive oil
  • 1 cup dry white wine
  • 4 sprigs fresh thyme
  • 3 tablespoons lemon juice, plus lemon wedges for serving
  • 1 tsp cornstarch
  • 8 garlic cloves, sliced thin
  • ½ teaspoon red pepper flakes
  • ½ teaspoon fresh ground pepper
  • 4 tablespoons unsalted butter, cut into ½ inch pieces
  • 1 tablespoon chopped fresh parsley

Directions

  1. Dissolve salt and sugar in a 1-quart cold water in a large container.  Submerge shrimp in brine, cover, and refrigerate for 15 minutes.  Remove shrimp from brine and pat dry with paper towels.
  2. Heat 1 tablespoon oil in a 12-inch skillet over high heat until shimmering.  Add shrimp shells and cook, stirring frequently, until they begin to turn spotty brown and skillet starts to brown, 2-4 minutes.  Remove skillet from the heat and carefully add wine and thyme sprigs.  When bubbling subsides, return skillet to medium heat and simmer gently, stirring occasionally, for 5 minutes.  Strain mixture through colander set over large bowl.
  3. Combine lemon juice and cornstarch in a small bowl. Heat the remaining 1 tablespoon oil, garlic, pepper flakes, and pepper in now-empty skillet over medium-low heat, stirring occasionally, until garlic is fragrant and just beginning to brown at edges, 3-5 minutes.  Add reserved wine mixture, increase heat to high, and bring to simmer.  Reduce heat to medium, and shrimp cover and cook, stirring occasionally, until shrimp are just opaque, 5-7 minutes.
  4. Return skillet to medium heat, add lemon juice-cornstarch mixture, and cook until slightly thickened, 1 minute. Remove from heat and whisk in butter and parsley until combined.  Return shrimp and any accumulated juices to skillet and toss to combine.  Serve, passing lemon wedges separately.Tips: When you buy shrimp or any shellfish you should always try to buy the frozen and wild product. If you buy shrimp, which is in the case at the supermarket you don’t know how long, it has been thawed, and you want the freshest product you can get.  Same with wild versus farmed, you don’t know what the fish have been fed or how fresh the water they are living in.

It sounds like Cheri had a good time on her cruise in the Mediterranean. 

Bill and Sherrie were on a river cruise from Basel Switzerland to Amsterdam but was interrupted when Bill got ill and had to come home

I also took a river cruise, starting in Amsterdam, and ending in Budapest. It was one of the best trips I have ever had. My only complaint would be I didn’t have time to read.  The weather was great, only one day of drizzly weather.  The scenery was outstanding but best of all the other guests and the staff working on the boat were all fantastic.  One of the interesting things is that we went through 68 locks on the various rivers we were traveling. .  Only 83 guests and 48 staff.  I think the highlight of the trip was when we went to the actual courtroom where the trials took place in WWII.  I can’t say enough good things about my Tauck trip.

Carole is scheduled to also go on a river cruise from Amsterdam to Vienna. I hope she has as much fun as I did.

Drake and Andi are headed to Alberta to take a Rhodes Scholar tour to Banff. That is a beautiful part of the world.

Edy, and her daughter Cari are going to spend some time in Spain later in the summer.

Laurie and Kaare are taking a Oceania cruise to Europe, starting in Iceland.

Neighborhood News

There are a lot of changes in our neighborhood.   The Rite Aid on the top of the hill is closing doors on June 30th .  I haven’t heard the reason for the closing or if there is anything scheduled to take over the space.

Five Guys is opening one of their outlets at 15515 Westminster Way N. Suite E.

A bit of history about Five Guys, in 1986 Jerry and Janie Murrell gave 3 of their sons some advice.  They told them to either go into a business or go to college, the 3 brothers chose the business route.  They must have had the touch; they now have 1700 locations in 24 countries. We enjoyed celebrating Father’s Day with family at Demetris.  We had a great time, good food, good service.  We went a bit early, so it wasn’t too busy but filled up as the evening went on. Of course, parking was a bit of a challenge, it being a beautiful Saturday evening it was to be expected.

Shoes on the Danube Bank

While Budapest’s Jewish community escaped the mass deportations, people weren’t safe from raids by the Arrow Cross Party. Made in 2005, the sixty pairs of cast-iron shoes placed on the edge of the Danube’s bank remember the victims who were lined up on the riverbank, ordered to remove their shoes (shoes were valuable), and shot into the river. ALERT!!

A phishing text message scam targeting drivers in Washington and across the U.S. began circulating in recent weeks, with some purporting to be from the state’s and Seattle’s “Department of Motor Vehicles” — two agencies that don’t exist.

(Jerry has received two copies of this email in the last week.)

Don’t click any links within the messages, said Thomas Charlson, a spokesperson for the Washington State Department of Licensing, which administers driver’s licenses in the state. The best way to handle them is to simply “click ‘delete and report junk,’ ” Charlson said.

People started receiving variations of the same phishing text message from various email addresses and from telephone numbers beginning with +63, the international area code for the Philippines. The messages all appear to cite a city or state code called “15C-16.003,” which doesn’t exist, and claim the recipient will face consequences if they don’t pay an outstanding traffic ticket or violation.

Those fake consequences include the driver being reported to what the texts called an “illegal database,” having their vehicle registration suspended, seeing their “driving privileges” suspended for 30 days, getting charged a 35% service fee at an unspecific toll station and being sued or having their credit score affected, according to reviews of the messages.
