Richmond Manor News | January 2026

A new year is upon us, hopefully it will be a happy healthy for all of us.  So far, we have had some wonderful weather, not a drop of snow and no adverse storms to give us any worries about possible damage to our building.  We can’t get too cocky; I have seen some nasty weather in February and March.

A few things to look forward to to:

  • The Sea Hawks are going to the super bowl, an exciting event for folks from Seattle.
  • Valentine’s day is coming up.

Speaking about love and romance, we all need to congratulate John and Linda Weschler for celebrating their 65th wedding anniversary this past week.  They are great role models for all.


January Book Club was held at Andi’s home; she led the discussion about our book and offered some tasty treats.  We had a good turnout, missing a couple for various reasons. We chatted about Love and Saffron by Kim Fay, an interesting story about friendship and food.  It was especially interesting because one of the individuals was from our area, so names and events were familiar to us.

February’s get together will be here at my home(Unit 303) on February 9th  I changed the book we are reading from The Sisters about the British family the Mitfords to The Lies They Told by Ellen Marie Wiseman a story about a German immigrant in the late 1930’s. See you then, remember to let me know if you’re coming or not.

 

 

 


Entertainment

We watched a great movie Nuremberg, with Bob’s recommendation, about the Nuremburg trials after WWll, Russell Crowe did a great job as Herman Goering.

I know a few of us have been lucky and have traveled to Germany and have been able to visit to the actual courtroom. We found the movie on Prime and had to pay for it, but it was worth it to be able to watch it in our home. It might be on Apple TV as well.

Recipe Du Jour

Chicken Salad

4 (6- to 8-ounce) boneless, skinless chicken breasts, no more than 1 inch thick,
½ cup mayonnaise
2 tablespoons lemon juice
1 teaspoon Dijon mustard
2 celery ribs, minced
1 shallot, minced
1 tablespoon minced fresh parsley
1 tablespoon minced fresh tarragon
Salt and pepper

Dissolve 2 tablespoons salt in 6 cups cold water in Dutch oven. Submerge chicken in water. Heat pot over medium heat until water registers 170 degrees. Turn off heat, cover pot, and let stand until chicken registers 165 degrees, 15 to 17 minutes.

Transfer chicken to paper towel–lined tray. Refrigerate until chicken is cool, for about 30 minutes.

While chicken cools, whisk mayonnaise, lemon juice, mustard, and ¼ teaspoon pepper together in large bowl.

Pat chicken dry with paper towels and cut into ½-inch pieces. Transfer chicken to bowl with mayonnaise mixture. Add celery, shallot, parsley, and tarragon; toss to combine. Season with salt and pepper to taste. Serve. (Salad can be refrigerated for up to 2 days.)

This recipe comes from America’s Test Kitchen. I use it as a base recipe, I usually get my chicken from Costco, in a can. I only want to make enough for a couple of days lunch  but if you want to make a larger amount cooking the chicken from scratch is the way to go.  Either way it is a great recipe for an old standby lunch treat.

Another great soup recipe from my recipe file, simple but hearty and easy to make with handy ingredients.

Corn Chowder

4-5 slices of bacon
1 medium onion
2 cans whole kernel corn (one creamy and one plain)
1 T sugar
2 cups of ½& ½
Salt and pepper

Saute bacon until crisp-add onion and cook until they are softened.

Drain plain can of corn and add both cans to bacon and onion mixture.  Add ½ 1//2 and sugar.  Salt and pepper to taste.


Neighborhood News

I’m sure you all know that the little store has new owners and is planning to open the establishment in Feb. 2026.

Two women who have been friends from childhood and lived in the area and frequented the store as children.  They have purchased the property and have plans to open the store with its original name Richmond Beach Foods. See https://www.richmondbeachfoods.com/

They will be offering groceries, coffee, deli items, gifts, beer, wine, and candy.

 

 

There is new business across the street next to Black Bird, it is called Tramp Stamp Fit, Stamp is a musically driven, high intensity, low impact workout designed to achieve a full body workout in 45 minutes. Arnie’s in Edmonds

In June 2025, major changes were finalized for
The Landing , the waterfront building in Edmonds that houses Arnie’s Restaurant.
The key developments include: 
  • Ownership Change: On June 6, 2025, 1010 Development LLC, led by Mike and Ryan Appleby, purchased the building for $1.3 million from long-time owner Catspaw LLC.
  • New Long-Term Lease: The Port of Edmonds signed a 50-year ground lease with 1010 Development, clearing the way for long-term redevelopment.
  • Boutique Hotel Plans: The new owners plan to redevelop the site into a boutique hotel. Proposed amenities include:
    • Wellness facilities such as a sauna and spa.
    • A social club and event space.
    • New eateries, including a first-floor café for coffee and grab-and-go items.
  • Arnie’s Remaining Open: Despite the sale, Arnie’s Restaurant is confirmed to stay open and operational through at least 2029. The redevelopment is currently in the early design and permitting stages, with actual construction not expected to begin for several years.

Environmental Review: In July 2025, Port Commissioners authorized an investigation into potential contaminants at the site, a standard

 

Thrift Shop Grand Opening

Saturday Jan 31st – Bella’s Voice.  Located at 185th & Aurora Ave (in the Old Bartell’s) .  Across from Fred Meyer in Shoreline.    They will be donating 50% of ALL sales to Seattle Area Feline Rescue.  Please come shop for the kitties!! step for historic waterfront properties before major renovation begins. 

Shoreline Place

There are big plans for what is called Shoreline Place. Folks have been working around Central Market and the space where Sears used to be located.  Take a look, it will be fantastic when they get it finished.  Hope they hurry, I would like to see it finished but not sure that will happen.

The Loft Kitchen & Bar on Main Street in Edmonds is permanently closed.

Here’s a statement from the owners, Niko and Paula Raptis: “After 17 wonderful years of serving the Edmonds community and the greater Seattle area, we have made the difficult decision to close this chapter of our journey. This was not an easy choice, but we believe it is the right one at this time. The building and restaurant space were purchased by Niles Peacock of Niles Peacock Kitchen & Bar. He plans to remodel the space and open a café/restaurant serving breakfast and lunch and his “award-winning” bagels. Stay tuned for more details.


Richmond Manor News

The Lawn and Garden committee has some work scheduled on our grounds and we thought you might want to know what is going on.  On Monday, February 9th we will have Washington Tree Experts on our grounds. They will be trimming the birches and the maple trees on the north bank.  They will also be removing and replacing some arborvitaes in the same area.

It seems like there is always something that needs to be done on the grounds.  We think it is important to keep our lawn and gardens in tip top condition so everyone can enjoy
