HAPPY NEW YEAR!!!!!!!!!!!!!!!!!

Hope 2018 will be as good as 2107 has been.

Didn’t you just love the white Christmas? It was so beautiful and such a surprise.

The annual Christmas Pot luck was a raging success.  Lots of wonderful treats to sample and a great time to get together and share good conversation and laughter.  We were so happy that Puneet and Pretti and children were able to join us.

Book Club

Book club will be back in full swing starting Monday Jan. 8th.  We will be reviewing A Gentleman In Moscow by Amor Towles.  We will meet here at our house.  Let me know if you plan to come.

Traveling neighbors

Our neighbors who are “snow birds” have fled south to escape our NW winters.  We will look for them to be back in the spring. Midori has been in Japan and Calif. We will be going on a road trip to the SW later this month

RMC Birthdays

Linda W. will have a birthday, also she and John and will be celebrating a anniversary this month.

Soup Recipe du Jour

Spicy Sausage and Kale and bean stew

1 Tbs. extra-virgin olive oil
1 medium yellow onion, chopped
¾   lb. hot Italian sausage, casings removed
2 large cloves garlic, minced
Two 15-oz. cans cannellini beans, rinsed and drained
1 small head escarole, chopped into 1- to 2-inch pieces, washed, and lightly dried
1 cup unsalted chicken stock
11/2   tsp. red wine vinegar; more to taste
Kosher salt
1/4   cup freshly grated Parmigiano-Reggiano

Heat the oil in a heavy 5- to 6-qt. Dutch oven over medium heat. Add the onion and cook, stirring occasionally, until tender, 5 to 6 minutes. Add the sausage, raise the heat to medium high, and cook, stirring and breaking up the sausage with a wooden spoon or spatula until lightly browned and broken into small pieces (about 1 inch), 5 to 6 minutes. Add the garlic and cook for 1 minute, then stir in the beans. Add the escarole to the pot in batches; using tongs, toss with the sausage mixture to wilt the escarole and make room for more.

When all the escarole is in, add the chicken broth, cover the pot, and cook until the beans are heated through and the escarole is tender, about 8 minutes. Add the vinegar, then season to taste with more vinegar and salt. Transfer to bowls and sprinkle each portion with some of the Parmigiano.
