Well here we are officially summer.  It looks like we are going to have good weather for the 4th of July.  That doesn’t happen too often.  A good time to break out the BBQ’s and enjoy a fun day with family and friends.

Traveling Neighbors

Laurie and Kaare are in France, they should be in Annecy today.  They have been experiencing some very hot weather.  I would love to change places with them except for the hot temps.

CJ & Luis are back in Madrid.  Their visit was too short but was great to see them and look forward to their next visit.

Edy is off working in London again, I hope she has time for a bit of fun.

Cheri spent a couple of weeks in Bakersfield with her family and will be going back down again.

We spent last weekend in Hood River celebrating Jerry’s birthday.  We did a bit of wine tasting and hanging out with family.  Jerry and I spent a couple of hours at the Western Antique Areoplane and Automobile Museum.  A nice presentation of classic transportation of a bygone era. There was a good-sized section of military vehicles. We recommend a visit to this area for a nice get away.

Ladies Lunch Bunch

We had a great time at our in-house lunch.  We had an abundance of great food with lots of visiting and laughter.

We had a great turnout.  With our busy lives it is difficult to find a date everyone is available.

Recipe Du Jour

I have a couple of recipes

Cookies and Candy

1 C. (two sticks) unsalted butter
1 C sugar
¼ box (approximately) salted saltine crackers
1 bag of chocolate chips
Chopped nuts (optional)

Preheat oven to 400 F.  Line large cookie sheet with aluminum foil.  Place saltines directly to each other in the bottom of the pan.  Melt butter in a saucepan. Add sugar and boil for 3-5 minutes, stirring thoroughly.  Poor butter/sugar mixture over saltines.  Bake for 5 minutes.  Remove pan and immediately pour chocolate chips over mixture and spread them around as they melt.  You may need to return the pan to the oven (turned off) to help the chocolate chips melt.  Sprinkle with nuts (optional).  Freeze or chill and break apart to serve.

Herbed New Potatoes

Serves 6

4 Tbsp (1/2 stick) unsalted butter
2 ½ Lbs. small white/red or Yukon gold potatoes, scrubbed but not peeled.
2 tsp kosher salt
½ tsp freshly ground black pepper
5 Tbsp chopped mixed fresh green herbs, such as parsley, chives or dill

Mel the butter in a Dutch oven or large heavy-bottomed pot.  Add the whole potatoes, salt and pepper and toss well.  Cover the pot tightly and cook over low heat for 20-30 minutes, until the potatoes are just tender when tested with a small knife.  From time to time, shake the pot without removing the lid to prevent the bottom potatoes from burning.  Turn off the heat and allow the potatoes to steam for another 5 minutes.  Don’t overcook!! Toss with the herbs and serve hot.

This recipe is versatile.  I use all kinds of potatoes, purple, or fingerlings, what ever is available.  I also make just enough for Jerry and I, reducing the ingredients.

Tips Du Jour

Strawberries are in season.

You can safely store strawberries by spreading them out on a plate lined with paper towels, which absorb any excess moisture. The plate goes into the refrigerator, and we’ve got smush-free berries at the ready.

How to store fresh Herbs

Gently rinse and dry them (a salad spinner works perfectly), and then loosely roll them in a few sheets of paper towel. Seal the roll of herbs in a zipper-lock bag and place it in the crisper drawer of your refrigerator. Your herbs will stay fresh for a week or longer.

Summer is for reading, no matter your age.  This summer, the Shoreline and Richmond Beach Libraries have joined with Lake Forest Park READS again this year, marking the fourteenth year of this community literary event. In This Is How It Always Is, Claude, the youngest of five brothers, is three when he announces that he wants to be a girl. The family agrees that Claude can be Poppy, and grapples with the difficulties and joys of raising a transgender child in this droll, touching novel.

Stories Under the Tree Family Story Time,  Thursday, July 19 and 26, 12 – 12:30 pm

Children of all ages are welcome to spread out a blanket in the shade, bring a lunch and a friend for stories, songs, and silliness under the big tree in the community park near the library. If the weather is uncooperative, this program will be held in the library meeting room.

Up Coming Event

Save the Date August 26, 2008

It is time for our Annual RMC Potluck.

In the past we have held it on the last Sunday in August which will be August 26th.    The date seems to have worked well so we will meet in the garage about 5:00PM.  Set up usually starts about 4 or so.  We will have a sign-up sheet so you can note what you would like to contribute to the event.  It has always been a fun evening.  So, put it on your calendars and your thinking caps as to what you will bring.  BYOB
