Richmond Manor News | May 2019

I hope everyone is enjoying our beautiful weather.  We are certainly better off than other parts of the country, either they are flooding or sweltering in heat.

Book Club was at Andrea’s home.  We discussed The Woman in the Window by J. Finn.   We had a lively discussion and enjoyed the evening. This was the last meeting until Sept. when we will meet at Linda W. home where we will make the selections for the coming season.  Keep track of any interesting books you might read this summer that you think the group might also want to read and discuss.

Traveling Neighbors

  • Edy and I made it back from our Istanbul trip, exhausted but thrilled about our trip. We had a wonderful time; saw things and places we would have never seen without our friends on the ground.  They treated us like Royalty.  Hopefully I will have all our photos organized soon so we can share them with all of you.
  • Linda and John are back in the mid-west visiting family. They should be home soon.
  • Bev was down enjoying California again.
  • Jeanne was lucky to get to go to Portugal
  • Edy has been to Denmark/Sweden for a work trip and just got back from a quick trip to Tucson for a family event.

Easy Baked Chicken Thighs
3 #’s chicken thighs (boneless and skinless)
¼ cup mayonnaise
1 T olive oil
4 garlic cloves, minced
2 tsp. salt
¼ tsp pepper
½ tsp. chili powder
1 tsp. paprika

  1. In a bowl, combine mayo, olive oil and minced garlic.  Add chicken thighs and coat with mayo mixture.
  2. Prepare the seasoning. In a separate combine the salt, pepper, chili powder and paprika
  3. Season both sides of chicken with the seasoning. Add chicken thighs to a baking dish.  Cover with foil.  Set aside to marinade at least 3-4 hours.
  4. Bake about 45 minutes at 375F. Remove foil and broil for 8-10 minutes, until tops of thighs are crispy and brown.

Serves 8

Tips Du jour

Concentrated flavor for summer drinks

Create inventive summer drinks by stirring scoops of frozen juice concentrate into a pitcher of unsweetened iced tea to taste.  Lemonade, limeade and orange juice are all great choices.

Dish Id

Taking food to a potluck or other get-together can be a bit of a risk.  Often your bowl, platter or serving pieces get lost in the shuffle.  Id them by writing you name with a dry-erase marker or stick an address label on the bottom.

Keeping cold dishes cold

  1. Serving cold dishes at a hot summer picnic or potluck can sometimes be tricky.  Here is one idea: Fill an enameled cast-iron Dutch oven with ice water and let stand until the pot is thoroughly chilled, about 5 minutes.  Dump out eh water and dry the pot and then transfer chilled food, such as potato salad or macaroni salad into the pot for serving.  The pot will retain the cold temperature much longer than a glass or plastic serving bowl.
  2. Fill one or two large zipper-lock bags with ice cubes and a few tablespoons of salt (the salt helps to keep the ice cold longer). Place the sealed bags in the bottom of a large serving bowl and cover them with lettuce leaves.  Spoon your salad onto the lettuce leaves.  It will stay cold for at least 1 hour.

Neighborhood news

Jerry and I sacrificed ourselves to bring you a review of the new frozen yogurt place in the neighborhood.  Froyo is located at 1437 NW Richmond Beach RD. Suite B.  Monica the owner advised that she will be open 7 days a week from noon to 10 PM.  We can vouch that the chocolate flavor is very good.

One just must be careful not to get carried away.  You are charged by weight so just beware.  There was a steady stream of folks visiting when we were there yesterday.

Farmers Market time

A good time to pick up farm fresh produce, flowers and enjoy checking out what the Farmers market have to offer.

Shirleen and David celebrated their 63rdwedding anniversary this week.

Save the Date

 

It is getting to be Potluck time.  In the past it has been held on the last Sunday of August.  This year that falls on August 25th.  So put the date on the calendar to save it on your schedule.

 

Restaurant Review

 

A bit further afield is Saltoro but still in the neighborhood located at 14053 Greenwood Ave. N. tel..206-365-6025.  www.menuism.com.  A little bit Italian and a little Greek, I think you can find something to eat here without a problem.  We enjoyed our dinner.

 

Condolences

We want to extend our heart felt condolences to Helen Shirk, Ed passed away last month.  Also to Cheri, both her parents passed away recently and to John Weschler who recently lost his sister.
