Spring has sprung, at least an early variety of it is here, nice to see some color around the neighborhood. I hope we don’t get some cold weather this month, it has been known to happen.

Our Feb. Book Club was great. Bev did a good job hosting the event. We had a nice chat about Age of Innocence. March get together will be at Linda W’s on March 9th. We will be discussing Raven Stole the Moon by Garth Stein. Let Linda know if you plan on going.
Soup Du Jour
Spaghetti & Meatball soup
1 pound store bought meatballs (or you can make your own)
½ cup EACH chopped carrots, celery, and onion
3 minced cloves garlic
2 Tbsp olive
1 T. dried Italian herbs
½ tsp red pepper flakes
6 cups low-sodium beef broth, divided
1 can crushed tomatoes (28 oz)
6 oz. dry spaghetti, broken into 2-inch pieces
½ cup chopped fresh basil
Salt and pepper to taste
Sauté or bake meatballs until cooked through
Mince carrots, celery, onions and garlic in a food processor.
Sauté the carrot mixture, Italian herbs and pepper flakes in oil in a pot over medium-high heat until softened, about 3 minutes.
Stir in 4 cups broth and tomatoes; bring to a boil. Add spaghetti and meatballs and simmer soup until pasta is al dente, 10 minutes. Stir in remaining 2 cups broth and season with salt and fresh pepper. Stir in basil right before serving.

Tips Du Jour
Split and Freeze
To expedite making English muffins for breakfast try this trick. If you freeze muffins to make them last longer, 1st split the muffins in half. Then wrap with plastic wrap and freeze in a plastic baggie, take out what you need and toast and serve.
Parmesan cheese rinds
Save you Parmesan rinds and use them to help flavor soups and stews. (You could actually use some in the above soup recipe) Store them in a zipper-lock bag in the freezer, the rinds will keep indefinitely. No need to thaw them before using.)
Greasing cake pans or casserole dishes
Here’s a smart way to grease pans: Save empty butter wrappers in sipper-lock bag in the freezer. Whenever a recipe calls for a greased pan; pull on wrapper out and whip it on the pans’ surface. Each wrapper is just enough to grease a pan
Sick List
Judy had her hip replaced a couple of weeks ago. She is doing so well, getting around and driving. She is amazing, our very own Bionic Woman. We all wish her well in her recovery.
Happy St Patrick’s day have fun celebrating but don’t drink too much green beer.
