Annual RMC Potluck
The date has been set for our annual potluck. It will be held on Sunday August 27th, so put the date in your calendars. We are hoping to have a good turnout. Maybe we will entice out new neighbors to join us for one of the best events we have in the condo. Dig out your favorite recipes for some yummy dishes to share.
New Neighbors
Some of you may have seen some new faces in the elevator and hallways of the building. Andrea and Drake Loeser have purchased Unit 306 from Arnie Bickford. They are gradually moving their belongings in, they will be moving in full time at a later date since they own a house on Whidbey Island they will be selling.
Recipe du Jour
Tex-Mex Taco Salad
2 Servings
½ C prepared Salsa
Combine salsa, less 2 T. to be used later, and sour cream in a large bowl.
2 T. reduced-fat sour cream
½ tsp canola
1 small onion chopped
2 cloves garlic, minced
1 large plum tomato, diced
½ C canned kidney beans, rinsed and drained
8 oz. lean ground beef or turkey
1 tsp. chili powder
1 tsp ground cumin
1/8 tsp salt, or to taste
2 T. chopped fresh cilantro
4 C. shredded romaine lettuce
¼ C shredded sharp Cheddar cheese
Directions
Heat oil in a medium nonstick skillet over medium heat. Add onion and garlic and cook, stirring often, until softened, 1 or 2 minutes. Add beef (or turkey) and cook, stirring often, until cooked through, 3-5 minutes. Add tomato, beans, cumin, chili powder and salt: coo. Stirring, until the tomato begins to break down, about 2 minutes. Remove from the heat, stir in cilantro and 2 T of the salsa mixture.
Add lettuce to the 2 T remaining salsa and sour cream mixture and toss to coat. Divide the lettuce between 2 plates, top with the cooked meat and sprinkle with cheese.
Serve with Taco chips and a slice of lime

Tip du Jour
Pasta Salads are great for a summer time meal. Here’s a quick tip to chill the pasta. Drain the cooked pasta in a colander. Then place the colander into a bigger bowl filled halfway with ice water. When the pasta is chilled lift the colander out of the ice water, drain the noodles and they are ready to use.

190 Sunset is located where the old antique market/Safeway store was located. Plenty of parking. 190 Sunset has a nice patio to enjoy on a nice summer day or evening. We went to 190 Sunset a couple weeks ago and were lucky enough to sit outside. We shared an appetizer and split a burger. Inside can be a bit noisy.
Next door to the 190 Sunset Restaurant is the Cascadia Art Museum, Hours…Wed-Sunday 11-6.
