Richmond Manor News | February 2018

We certainly have had a mixed bag of weather of late.  But that is not unusual for our part of the world.  So, sit back and enjoy the sunny days, find a good book to fill the time on the rainy ones and be happy we don’t have 3 feet of snow or the same of water.

Book Club

Book club convened at Carole’s home.  I understand there was a good turnout and Carole served some wonderful treats.  Apparently, the book was a bit difficult to discuss. I think this will happen time to time, so we must resort to the other reason we get together.  That is to have a good time and to enjoy the company of our fantastic neighbors.

March book club will be held at Myrna’s home, #204.  The book is Hillbilly Elegy by J.D. Vance.  Let Myrna know if you’re going to attend.

Traveling Neighbors

We had a good time on our road trip, were lucky with the weather.  We had rain in Manzanita, Oregon going down the coast and a bit of rain in Beaverton on the way home.  Lots of beautiful scenery on the trip down the coast, some of which I didn’t see because I had my eyes closed, I’m a bit of a scaredy cat.  This was our 1st time in Sedona and would like to go back, the red rocks were beautiful.  We visited friends in Tucson and family in Gilbert

Cheri had a good time in Bakersfield, we might have been there at the same time.

Edy’s trip to London was mostly business, she did get a chance to see Kinky Boots which she said was fantastic.  She also was in Savanah on a working trip also.

Recipe Du Jour

Pizza Meat Loaf

Preheat oven 400F

Ingredients

 ½ C Mozzarella cheese, shredded
½ C. milk
2 Lbs. ground beef
½ c saltine cracker crumbs
½ tsp salt & pepper
½ tsp oregano
1 clove minced garlic
1 (10 ½ oz) pizza sauce
2 eggs
1 C. sliced fresh mushrooms

Instructions

Combine all ingredients except mushrooms, sauce and cheese in a large bowl and mix together.

Place in a 9 X 13 baking pan and bake for 20 minutes.  Drain if a great amount of grease in in the pan.  Pour pizza sauce over meat add mushrooms on the top and then cheese.  Bake another 10 minutes.

Soup Du Jour

Chili Mac Soup
Serves 5

 Ingredients:

Sauté

1 Lb. ground chuck
2 Tbsp olive oil
½ C diced onion
½ C diced green bell pepper
1 Tbsp minced fresh garlic
1 Tbsp. chili powder
2 tsp. ground cumin

Stir in

4 cups low-sodium chicken broth
2 C. tomato juice
1 Can red kidney beans (16 oz) rinsed and drained
1 Can fire-roasted diced tomatoes (14.5 oz)
6 oz. dry macaroni

Off Heat. Stir in

1 C frozen corn kernels thawed
Salt and black pepper to taste
Shredded cheddar cheese

Sauté chuck in oil in a large pot over medium high heat until cooked through, breaking up with a spoon or potato masher, 4-5 minutes; drain off all but 1 Tbsp. drippings.  Add onion, bell pepper, and garlic to pot; cook until onion softens, 3-5 minutes.  Stir in chili powder and cumin; cook 1 minute.

Stir in

Broth, tomato juice, beans, and tomatoes; bring to a boil.

Off heat, stir in Corn and season soup with salt and pepper, Garnish servings with cheddar cheese.

Condo Project

We should soon be finished with our painting and carpet installation project.  I hope everyone in enjoying the beautiful carpet and fresh coat of paint.  We will be getting the “book nook” put back together when the carpet is installed in the room.  At that point we will be putting the books back on the shelves.   We will be sorting books, discarding duplicates.  If at this time anyone wants to donate any books, please let one of us on the Décor committee know and we will add them to our collection.  It is a great resource to have at our disposal.

Neighborhood News

Wake N Bacon, the new BBQ place up the street is open.  Has anyone eaten there yet?? I have read some reviews on “Neighborhood” that had good things to say about it.  I don’t have the hours yet but will post when I get that information.

David Becker will be celebrating this month
